We usually say our Altostratus Pinot Noirs drink best between four and seven years but we’re definitely reviewing this maxim. It’s still fresh and bold at five years in and shows no sign of diminishing. If anything, it’s really coming into balance. Another five years in the cellar would be a cakewalk.
